How to Make Ragda Pattice for Chaat Lovers

Ingredients for Pattice

  • 4 medium potatoes boiled and mashed
  • 2 green chilies finely chopped
  • 1 tsp ginger paste
  • 1/2 tsp red chili powder
  • 1/2 tsp turmeric powder
  • Salt to taste
  • 2 tbsp cornstarch or all purpose flour for binding
  • Oil for shallow frying

  • 1 cup dried white peas (soaked overnight)
  • 1 medium onion finely chopped
  • 1 tsp ginger garlic paste
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • Salt to taste
  • 2 tbsp oil
  • Fresh coriander for garnish

How to Make Ragda

  1. Pressure cook soaked white peas until soft.
  2. Heat oil in a pan add cumin seeds and sauté onions until golden brown.
  3. Add ginger garlic paste and cook for a minute.
  4. Add turmeric red chili powder coriander powder and salt. Mix well.
  5. Add cooked peas and some water to make a slightly thick curry. Simmer for 10 minutes and finish with garam masala and fresh coriander.

How to Make Pattice

  1. Mix mashed potatoes with green chilies ginger paste red chili powder turmeric and salt. Add cornstarch or flour for binding.
  2. Divide the mixture into small balls and flatten them into patties.
  3. Heat oil in a pan and shallow fry the patties until golden brown and crispy on both sides.

Serving Suggestion

Place hot pattice on a plate and pour ragda over them. Top with chopped onions coriander chutney tamarind chutney and sev for the perfect chaat experience.
