Step 3: Infuse the Oil with Whole Spices
In a medium-sized pot, heat the oil or ghee over low-medium heat. Add the peppercorns, cinnamon, bay leaf, cardamom, and cloves. Let them crackle for 20â30 seconds. This will release their essential oils and impregnate the dish with a fragrant layer.
Step 4: Add the Rice
Drain the rice and add it gently to the pot. Gently stir it to coat every grain in the fragrant oil.
